Time/temperature control for safety food reheated for hot holding not reaching 165 degrees Fahrenheit for 15 seconds within 2 hours. cooked rice (96F - Reheating); Second test after thirty minutes (175F) cooked rice cooked quinoa (76F - Reheating); Chicken tortilla soup (74F - Reheating); butternut squash soup (71F - Reheating) Operator put rice back in rice cooker, increased steam table temperature and began stirring soup in increments.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. In kitchen, observed cooked rice (110F - Cooling) in deep third pans with lids. Per operator rice has been cooling for one hour. Educated Operator on cooling process and required time and temperature. Operator spread rice out on sheet pans, and placed in walk in cooler.
