Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Cooked Peppers (48F - Cold Holding) in reach-in cooler on pizza make line. Operator stated it had been in the cooler for less than 4 hours. Operator moved items to walk-in cooler for rapid cooling and replaced with items at proper cold holding temperature.

Plumbing system in disrepair. Observed pipe/floor drain clogged and closed off under three compartment sink with clear water under three compartment sink on floor. Operator has contacted plumper to repair and plumber will be here today. Operator had employee start to mop and sanitize area.
