Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw shrimp over bottle sauces in reach in cooler and in the walk in cooler there was raw chicken over feta cheese and celery, operator moved to bottom shelf.
No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. No paper towels or mechanical hand drying device provided at handwash sink. Observed no paper towels at hand washing sink in back of kitchen, employee replaced.
Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed employee drinks on prep table in the kitchen, employees moved.

Nonfood-grade bags used in direct contact with food. Observed non-food black grade bags in the walk in cooler with bread in it.

No written procedures available for use of time as a public health control to hold time/temperature control for safety food. Observed no written plan for the pizza at the front counter, sent owner copy by email.
Dishmachine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly. Observed dish machine with a reading of 0ppm chlorine after sanitize rinse, operator putting a work order in, will use the 3-compartment sink for the dishes.
Equipment and utensils not properly air-dried - wet nesting. Observed clear containers stacked on the shelf in back of kitchen with water in between and not air drying properly.
Food stored on floor. Observed 2 boxes of shortening on the floor in the kitchen operator placed on table.
In-use utensil not stored with handle above the top of time/temperature control for safety food and rim of the container. Observed handles of tongs down in a container of feta cheese on the prep table, operator moved.
Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed gaskets in reach in cooler soiled in the kitchen.

Wiping cloth sanitizing solution stored on the floor. Observed sanitizing solution on the floor by the prep table with the slicer on it, operator placed in proper location.

No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses. Sent owner a copy by email, will have employees sign.
Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed chicken noodle soup not date marked or labeled, employee stated was made yesterday morning.

Nothing was found. The inspector recorded no violations at all.
