Observed chlorine sanitizing dishmachine at 10 ppm. Operator set up three compartment sink with a chlorine sanitizing solution at 50 ppm and contacted company to service machine.
Raw animal food stored over/not properly separated from ready-to-eat food. Raw shell eggs stored over shredded lettuce in reach-in cooler on cook line across from grill. Operator moved and stored correctly.

Heat strip failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface and/or high temperature holding thermometer did not reach 160F. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Spoke with service technician who arrived at time of inspection who stated the fuse to the hot water booster continues to be blown due to a malfunctioning water heater. This issue has been documented and brought up to management per the technician on previous visits. Discussed in depth with operator and importance of having a properly functioning dishmachine.
Handwash sink not accessible for employee use at all times blocked with towels across from grill on cook line. Inspector removed.
