Approximately 15, small dead flying insects found in dry storage area on top of containers of icing. Approximately 2, small dead flying insects near exit door. Approximately 3, small dead flying insects in meat cutting area, one on prep table near raw beef.
Dented/rusted cans present. See stop sale. Observed four cans of olives dented at or near the seams. The operator segregated the items for return.
Employee began working with food, handling clean equipment or utensils, or touching unwrapped single-service items without first washing hands. Observed employee handle box of raw fish and return to cook line without washing his hands.
Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed raw chicken wings stored over raw fish in reach in cooler. The operator corrected the items. Observed raw chicken over raw beef in meat cooler, the operator relocated the items.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed chocolate soft serve mix (47F - Cold Holding); vanilla soft serve mix (46F) in soft serve machine at buffet line. Operator not to use machine until refrigeration is corrected to hold at 41F or below. Observed cheese (49F - Cold Holding)at pizza area, educated operator about not overfilling.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed fried chicken (107F - Hot Holding) at buffet line, the operator pulled the item to reheat.
Water treatment device has not been inspected or serviced according to manufacturer's instructions. Observed water treatment device with a replacement date of 3/2026.
