Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly 0ppm. Operator set up triple sink 209ppm QAC to sanitize until machine is repaired.
Manager or person in charge lacking proof of food manager certification. PIC Nakaya Richards is food manager certified, but can not find her certificate.
No chemical QAC test kit provided when using QAC sanitizer at three-compartment sink and wiping cloth container.
