Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours. 4 trays of cooked vegetable on the prep area counter, cooked vegetable spring rolls (94F - Cooling). Operator stated they were in the cooling process and were prepared three hours ago. Advised operator to place rolls in walk in cooler, operated placed in walk in cooler.
Displayed food not properly protected from contamination. Stored Corn starch near stand alone cooler did not have a protective lid. Operator covered corn starch.
Raw animal food stored over/not properly separated from ready-to-eat food. Observed Raw shrimp directly placed on ready to eat tofu in the walk in cooler. And In the reach in cooler across from flat top, raw chicken was stored over ready to eat washed vegetables. Operator rearranged for proper storage.
