Ambient temperature 48F in flip top reach-in cooler near triple sink. Observed gasket slipping off door. Operator stated gasket is new but maybe not installed properly. No TCS foods currently in reach-in cooler. Discussed no TCS foods can go into cooler until unit able to maintain 41F and below. Bigger cooler is available to store TCS foods on MFDV
