Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Oreo cheesecake (45F - Cold Holding) for less than 4 hours, raspberry mousse (46F - Cold Holding) for less than an hour. Operator will be utilizing time as public health control for display desserts and operator stated door was left open while reorganizing the walk in cooler. Advised to keep door closed to ensure temperature drops to at least 41F
