Dishmachine not sanitizing properly. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observing dish machine sanitizer level 0ppm.
Employee handled soiled equipment or utensils and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed employee load dirty dishes then not wash hands before touching clean dishes. Manager discussed with employee and rewashed dishes.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Observed no test kit on site.
No paper towels or mechanical hand drying device provided at handwash sink. Observed no paper towels at rear kitchen hand sink. Manager replaced towels.
Dishmachine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly. Observed dish machine sanitizing at 0ppm. Manager to call for service.
Employee wearing jewelry other than a plain ring on their hands/arms while preparing food. Observed food prep employee with bracelets on wrist. Employee removed.
No handwashing sign provided at a hand sink used by food employees. Observed no handwashing sign at cook line hand sink.
