Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. plant based chicken (103F - Hot Holding at 10:45, retemp 158F at 10:52); plant based sausage (79F - Hot Holding at 10:45,retemp 157F at 10:52) manager put items in green counter oven to cook them back to 165F and then placed them back in warmer.
Toxic substance/chemical improperly stored. Container of tide pods stored next to single serves packets of sugar. Manager moved.
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Wiping cloth sanitizer at 400PPM. Manager diluted sanitizer to 200PPM
Food-contact surface soiled with food debris, mold-like substance or slime. Observed food debris on long white cutting board attached to reach in cooler by green oven. Observed food debris on square white cutting board on table next to green oven. Manager cleaned and sanitized cutting boards of food debris.
Floor of walk in freezer has accumulation of food debris.
