Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed their Dinner side dish machine at 0ppm chlorine. Operator called their company and had the employees redirect the dishes to the working bakery side dish machine.
Raw animal food stored over or with unwashed produce. Observed a container of raw beef stored on top of Brussels sprouts. Operator moved the beef.
Food stored on floor. Observed numerous cases of food stored on the floor of the walk in cooler and freezer.

Observed their to-go sandwiches only with the food identification. Reviewed proper labeling with the operator.
