As per operator foods in unit not portioned or prepared today. In unit less than 4hrs. Observed food seated next to hot table. Operator removed spinach dip from area, then placed bag of ice to quick chill away from hot table.
Equipment and utensils not properly air-dried - wet nesting. On clean ware washing rack observed multiple hotel pans still wet but stacked on each other. Operators removed to properly clean and air dry
Ice buildup in reach-in freezer and/or walk-in freezer. Ice buildup up inside walk in freezer. Multiple shelves and closed boxes covered in ice. Floor of walk in freezer under fan unit has a layer of ice built up
