Shell eggs not stored at an ambient air temperature of 45 degrees Fahrenheit or less. Observed shell eggs stored at room temperature at 50F under cart in kitchen. Per operator items have been out of temperature for approximately 1 hour. PIC placed eggs in reach in cooler to rapid cool.
