Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed employee change gloves without washing hands after touch raw steak and ready to eat food. After brief education, employee change gloves and wash hands.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. -Observed hard boiled eggs cold held at 57F in flip top cooler. Per operator, eggs transfer from walk in cooler 1 hours prior to the inspection. Operator discarded at will.
Food-contact surface soiled with food debris, mold-like substance or slime. -Observed accumulation of black mold like substance buildup on can opener blade. Operator discarded can opener at will.
Hot water sanitizing dishmachine final rinse not reaching proper temperature at manifold. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired.
