Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dishwasher (Chlorine 0ppm) bar. Operator replaced the empty container of sanitizer, chlorine sanitizer 50ppm.

In the walk in cooler there are 5 eight ounce portions of grouper fully thawed inside commercially reduced oxygen packages that are marked remove from packaging and thaw under refrigeration.
