Equipment in poor repair. Insulated egg wash pan cracked, interior and insulation exposed and uncleanable.
Single-service articles not stored inverted or protected from contamination. Single service plastic knives on front counter for self service, lying on sides, food contact surface exposed to contamination. Manager put knives in pan with handle up.
A return visit. The problems from the previous inspection had been dealt with.
