Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On table beside fryer, falafel mix (70F - Cold Holding). Per employee not prepared or portioned today and out of cooler maybe 1-1.5 hrs. Employee returned mix to fliptop cooler to rechill.
