Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. On prep counter: house made ranch (49F at 2:00pm; 60F at 2:30pm- Ambient Cooling) As per operator, prepped since 5 mins. At current rate of cooling, item will not cool to 41F in a total of 4 hours. Portioned cups of house made ranch with buttermilk was left on counter whilst employee did other tasks. Operator discarded.

Observed employee going from setting up sanitation bucket with sanitation solution to putting gloves and touching clean spatula to moved cooked onions without washing hands first. Employee switched from working with raw food to clean utensils and seasoning shakers without washing hands. Employee was wearing double gloves, outer glove very loose kind, employee removed outer gloves with hands then proceeded to touched clean utensils without washing hands first. Employee washed hands and manager educated employee on the proper use of double gloves.
