Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Observed fish thawing on speed rack in walk in cooler with no cuts on package for proper thawing.
Ice buildup in reach-in freezer and/or walk-in freezer and/or reach in coolers/freezers. Observed at salad prep station, ice buildup up on coils in reach in cooler.
Stored food not covered. Observed prepped sauces in one ounce soufflé containers without protective covering over them on speed rack.

Silverware/utensils stored upright with the food-contact surface up. Observed whisps on drying rack stored with handles down. Observed operator removing whisps and storing handle up.
Working containers of food removed from original container not identified by common name. Observed two cambro with dried product inside without identifying labels. Observed operator labeling product.

Food-contact surface soiled with food debris, mold-like substance or slime. Observed soda gun in bar with black residue on out side of gun cover in grooves. Observed bartender take cover off and put in wash ware sink.
Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Observed in bar a mixer glass stored on drying shelf open end up. Observed bartender inverting it correctly.
