Operator will reheat empanadas to 165F for hot holding.

Sanitizer not used in accordance with the manufacturer's recommendations. Observed stirring spoons stored in sink and surface sanitizer at front counter. Educated operator on proper sanitizing methods and suggested using hot water 135F or above to store stirring spoons. Operator replaced sanitizer with hot water 135F.
