Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Hard boiled eggs in shell at improper cold holding temperature. Eggs were displayed on a plastic tray sitting on two partially thawed cold packs. It appeared there had been a lid on the container, which was broken/missing. Employee stated eggs were placed into service one hour prior. Employee placed ice around and on top of eggs to chill. hard boiled eggs in shell - ambient temperature (65F - Cold Holding)
No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses. Provided copies of form to Management, who began signing.
