Dishmachine not sanitizing properly. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Tested chlorine sanitizer at 0ppm, at kitchen dishmachine. Establishment has a three compartment sink using quaternary sanitizer, advised to setup third compartment to properly sanitize dishware until dishmachine is sanitizing properly.

Observed individual butter packet (64F - Cold Holding) and individual cream cheese packet (64F - Cold Holding) located at breakfast buffet area, held at room temperature, less than 4 hours. Butter and cream cheese packets were placed back into reach in cooler to lower temperatures to 41F.
