Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed raw shrimp (46F - Cold Holding) in the low boy cooler on the cook line. The operator provided a temperature log showing proper cold holding temperatures of foods in the cooler. The operator placed ice on the raw shrimp. Observed fresh garlic and butter (80F - Cold Holding) on the cook line. The operator stated the garlic butter had been held for approximately 2.5 hours. The operator was given a time as public health control form.
