Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. 1)Observed sliced cheese (45F - Cold Holding); cut cabbage (45F - Cold Holding). 2) Observed raw chicken (51F - Cold Holding). 3) Observed Flip top refrigerator; raw chicken (43-50F - Cold Holding). All TCS food in tall reach in cooler, fans on top blocked by bread items. Air flow unable to reach the bottom of the cooler. Operator rearranged cooler for the air to properly flow.
