Operator moved to reach-in cooler. Discussed product being a time/temperature control for safety food and requirements pertaining to maintaining proper temperature. Observed Chicken Wings (50F - Cold Holding); Nuggets - Raw Chicken (Different Cuts) (48F - Cold Holding) in reach-in cooler on cook line to the left of the fryers not plugged in. Operator stated product had been in cooler for less than an hour. Operator plugged cooler in.
Handwash sink not accessible for employee use at all times. Observed sanitizer bucket and rags stored in handwash sink at front counter. Operator removed to set up sanitizer buckets making handwash sink accessible.
