Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Food items inside white stand alone refrigerator: marinara sauce (48F - Cold Holding); cube cheese (49F - Cold Holding); cooked chicken (49F - Cold Holding); hummus (46F - Cold Holding) The establishment only has one other stand alone refrigerator that is storing beer at the moment. The operator turned down the temperature inside the fridge and moved the items into stand alone freezer to bring down the temperature rapidly. The operator stated they will call a service technician to check the unit.
