Employee drank from an unenclosed beverage container (bottle with twist off/on lid) twisting off and back on lid with fingers then handled clean equipment, clean utensils, unwrapped single-service take out containers, deli paper and prepared/portioned/packaged food for customers without washing hands. Discussed with employee who then washed hands.
Time/temperature control for safety food (cheese pizza and butter blend) identified in the written procedure as a food held using time as a public health control (TPHC) has no time marking. Operator stated held less than 4 hours, applied appropriate time mark.

As per manager all food handlers hired within last 60 days. Explained Food hand training allows 60 days. Food employee reporting agreement needs to be signed from day 1 ( before starting the work ) emailed one.
