Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed chicken at 50F. Operator stated the chicken had been I the 3 door reach-in cooler for approximately 3 hours. Operator moved the chicken to walk-in cooler to rapidity bring down temperature.
