Warewashing sanitizing solution exceeding the maximum concentration allowed. Observed quaternary ammonium sanitizer solution testing at 500+ppm in three compartment sink. Person in charge stated the chemical dispenser is a new system and just needed to be calibrated. Employee began diluting quaternary ammonium solution with water.
