Operator coached employee on proper hand washing procedures. Employee took off gloves, washed hand and put on new gloves.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cut lettuce (70F - Cold holding); sliced tomatoes (70F - Cold Holding) as per operator for less than 4 hrs. Operator placed products inside walk in cooler for rapid cooling.
