Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cooked chicken on stove (67F - Cold Holding) in aluminum pan. Person in charge left out on stove to place in oven for less than 1 hour. Person in charge placed all chicken in oven to reheat.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed chicken legs (91F - Hot Holding) on steam table for less than an hour per person in charge. Person in charge placed in oven to reheat.
Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Observed all ziplock bags of meat in reach in cooler from previous mornings cooking not date marked.
Handwash sink not accessible for employee use at all times. Observed hand washing station blocked by food and sanitation buckets. Person in charge moved food and buckets.
No paper towels or mechanical hand drying device provided at handwash sink. Observed no paper towels on food truck. Person in charge had employee get paper towels from Flagler collage.
