Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed the dishmachine chlorine solution at 0ppm. The operator replaced the empty solution container. Solution is at 100ppm.

Observed shredded cheese (51F - Cold Holding); cut melon (50F - Cold Holding) stored stacked above the fill line in the top section of the reach in cooler on the hot cook line. The operator stated the potential hazardous foods had been held for approximately 1.5 hours. The operator emptied half of the contents and stored in a separate cold holding unit.

Observed raw whole-muscle beef stored in vacuum packaging. The operator stated the beef was packaged within 48 hours. The operator removed the beef from the packaging.
