Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Items in reach-in cooler next to breakfast serving area: ham (47F - Cold Holding); egg (48F - Cold Holding). Employee stated items were at proper temperature three hours prior to temperature being taken and door had been open and closed quite a bit setting up breakfast. Employee moved items to reach-in freezer to reduce temperature to 41F and turned down temperature in reach-in cooler.
