Observed Flip top refrigerator; potatoes salad (48F - Cold Holding); egg whites (47F - Cold Holding); (47F); hard boiled eggs (47F - Cold Holding); sliced cheese (47F - Cold Holding). Operator stated all food cane from walkin refrigerator in the morning and placed ice on top of food and coved refrigerator.

Per operator, not prepared or portioned today. Per operator, out of temperature for approximately 1.5 hours. Operator placed in freezer to quick chill.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. sausage gravy (120F - Cooling) at 8:47; cooling since 8:17 - 114F at 9:11 Observed on counter in kitchen. At current rate of cooling product will not reach 70F within 2 hours. Operator moved product to walk in cooler.
