Approved Process Waiver not maintained at the food establishment. During inspection observed ROP fish salmon, swordfish, snapper inside walk in freezer. Chef Nicky let me know that fish was purchased fresh and put inside ROP before freezing.
Hot water sanitizing dishmachine final rinse temperature at manifold exceeds 194 degrees Fahrenheit. Ran a few times. Final rinse temperature was 151 degrees Fahrenheit. Maintenance fixed on site
