Raw animal food stored over/not properly separated from ready-to-eat food. Observed Raw eggs over heavy cream and milk in walk in cooler in bakery. Operator changed order.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed in warmer: sausage (120F - Hot Holding); potato (116F - Hot Holding). As per operator, food has been there for less than 3 hours. Operator turned up heat. Second temp one hour later: sausage (165F Hot Holding); Cooked Bacon (160F Hot Holding); potato (158F Hot Holding).
