Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. Observe with meat sauce, and tomato sauce that was frozen and not properly tracking how many days left to used.

Person in charge stated that they don't have any way to test temperature of person in charge did not have any way to test high temperature dishwasher with termo lables or high temperature dishwasher.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observe at Flip top refrigerator; tuna, cream (45F - Cold Holding). 2) observe at Flip top refrigerator; ham,sausage,cream,sliced tomatoes,sliced cheese (48-51F - Cold Holding) operater stated less then hour and placed all food on ice bath. Operator removed to other refrigerator. 3) observe at Pizzas flip top refrigerator; cooked vegetables,tomato sauce,cream sauce overnight (48-50F) se stop sale
