Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw chicken eggs over ready to eat tartar sauce. Operator removed the sauce.
Handwash sink used for purposes other than handwashing. Observed the back storage area hand wash sink used to dump ice. Operator removed ice.

Dented/rusted cans present. See stop sale. Observed 4 cans of tomato juice, 7 cans of red kidney beans, and 6 cans of crushed tomatoes with rusted edges. Operator set cans for refund.
Employee rubbed hands together for less than 10-15 seconds while washing hands. Observed employee washing hands for less than 10 seconds in the hand washing sink. Operator informed employee of proper hand washing procedure, and had her wash her hands.
Stop Sale issued on time/temperature control for safety food due to temperature abuse. Observed in walk in cooler: Battered grouper (46F - Cold Holding) Operator stated it had been stored in the cooler for approximately 5 hrs. Operator disposed of fish.

Toxic substance/chemical improperly stored. Observed sanitizer bucket stored on food prep tables. Operator removed bucket.
Warewashing sanitizing solution exceeding the maximum concentration allowed. Observed chlorine concentration at 300ppm in the triple sink. Operator remade triple sink sanitizer and retested it at 100ppm.
Employee washed hands in a sink other than an approved handwash sink. Observed employee washing hands in the dish sink. Informed employee to wash hand in hand wash sink.
Handwash sink not accessible for employee use at all times. Observed handwash sink back by meat slicer with electrical cords blocking it. Employee removed cords.
