Operator has eggs time on written plan to be removed from refrigerator and stored for four hours and discarded at 10:15 am and at 11:00 was returned to refrigerator. Operator put the eggs back by the cooktop level of discard will discard at 2:15.

Per operator, out of temperature for approximately 30 minutes. Operator returned to stove to reheat to 165+F.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Boiled shell eggs 60°F, cooled in cold water, on front counter at room temperature for less than one hour. Air cooled boiled shell eggs can be left out at room temperature, once cooled under cold water eggs have to be refrigerated. Operator placed eggs in cooler.
