Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed at cook line prep cooler smoked fish dip (53F - Cold Holding); coleslaw (51F - Cold Holding). As per operator less than 3 hours. Operator placed onto ice.

Observed chicken wings and fries being held on time without time mark, as per operator products were placed on time one hour ago. Operator placed time on products.

Operator placed container of sliced cheese on ice for rapid cooling.

Observed chicken thighs (1:30pm) (54F - Cooling); and chicken thighs (2:20pm) (52F - Cold Holding) at walk-in cooler. The product dropped 2 grade in 50 minutes. Manager moved the product to coolest place in the walk-in cooler for rapid cooling.
Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Observed Triple Sink (Quaternary 0ppm). Manager started to change sanitizer solution.
