Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. A pan of sausage patties (128F - Hot Holding) stored in the insulated hot box in kitchen. Operator states all hot food will be served or discarded within 4 hours of breakfast time frame. Recommended to put in time control written procedure.
