Cutting board has cut marks and is no longer cleanable. Observed excessive cut marks on cutting boards on prep table.
Walk-in cooler/freezer shelves with rust that has pitted the surface. Observed rusted shelves inside walk in cooler.
Ordered shut on the spot. 12 violations recorded, 2 of them the tier the state says can make you ill. A reinspection is required before this kitchen may reopen.

Observed one dead roach behind the hot holding cabinet located at the prep line by the front counter area. Observed 2 dead roaches around the floor drain located in the bar area.
Equipment and utensils not properly air-dried - wet nesting. Observed wet nesting on equipment on drying rack next to kitchen entrance.
Food stored on floor. Observed buckets of pickles on the floor inside walk in cooler. Observed cases of oil on floor next to dry storage. Operator had employee raise both items off the floor onsite.
Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed soiled interior of oven.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed in the refrigerated drawers at front counter banana pudding (47F - Cold Holding), as per operator less than 1 hour. Employee removed pudding and transferred it back to the walk in cooler to maintain proper temperature.
