Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Utensils. Employee corrected.

Quaternary ammonium sanitizer used to sanitize clean in place equipment not at proper minimum strength. Do not use equipment not properly sanitized. Found at 0 ppm. Manager replaced with Quat sanitizer.
Chemical test kit not used to ensure proper sanitization of equipment and utensils when using a chemical sanitizer. Expired test kits for both quat and chlorine sanitizer. Educated staff on the importance of checking sanitizer solutions. Staff was able to obtain test kits.
Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Manager cleaned.
Current Hotel and Restaurant license not displayed.
Incorrect solution being used to sanitize three compartment sink/ sanitizer bucket. Degreaser was being used instead of Quat sanitizer. Manager was able to obtain correct sanitizer solution. Education provided to staff.
