Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Observed high temp dishwasher reaching 155F after multiple cycles. Person in charge has triple sink set up.

Observed butter (70F - Cold Holding); cream cheese (65F - Cold Holding)on cold buffet not on time per person in charge verbal procedures. Person in charge will add to time paperwork. Person in charge voluntarily disposed of butter and cream cheese during inspection.

Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed gaskets on single door reach in cooler soiled with black/green mold like substance. Person in charge had employee start cleaning gaskets.
