Per operator, Raw shrimp was sitting in dry flour approximately 2 hours not actively cooking. Advised operator of proper cold holding parameters. Operator discarded product.
Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Wiping cloth quaternary sanitizer 0ppm. Operator changed sanitizing solution to quaternary 200ppm.

Employee failed to wash hands before putting on gloves to initiate a task working with food. At cookline employee handled raw fish then changed gloves and proceeded to handle fried chicken to plate and single service container without washing their hands - educated operator- employee washed hands.
Required employee training expired for some employees.
