Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At cook line, raw shrimp (71F - Cold Holding). Not prepared or portioned today. Per operator, Raw shrimp was sitting in dry flour approximately 2 hours not actively cooking. Advised operator of proper cold holding parameters. Operator discarded product.

Employee failed to wash hands before putting on gloves to initiate a task working with food. At cookline employee handled raw fish then changed gloves and proceeded to handle fried chicken to plate and single service container without washing their hands - educated operator- employee washed hands.
