Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed containers at stove top - cooked onions (120F - Hot Holding); cooked mushrooms (127F - Hot Holding) as per operator items held out of temperature for approximately 3 hours. Operator turned stove temperature up.
