Observed the dishwasher machine testing at around 10ppm, manager had employee prime and re-run machine tested at 50ppm.

Observed an employee beverage in the cooler on the cook line with items sold to the public. Manager removed. Discussed proper storage with manager.
Equipment and utensils not properly air-dried - wet nesting. Observed wet stacked containers on the dish drying rack. Manager unstacked containers so that they can air dry correctly.
Food stored on floor in the walk in freezer. Manager placed on the storage rack.

Equipment and utensils not properly air-dried - wet nesting. Observed wet stalked containers on the dish drying rack. Manager informed employee of the proper drying procedures. Employee unstacked containers and allowed containers to begin to air dry properly.
Floor area(s) covered with standing water. Observed standing water in the back prep area and the dishwashing area. Manager had an employee dry the area.
Single-service articles improperly stored. Observed to go single service items stored on the floor in the second floor storage area.
Time/temperature control for safety food thawed in an improper manner. Observed a container of raw breaded chicken wings on the three compartment sink. Manager stated that an employee had just pulled them from the freezer and it was in the process of thawing. Educated manager on proper thawing methods. Manager placed container of frozen wings in the refrigerator.
Water leaking from pipe and/or faucet/handle. Observed a leaking faucet at the mop sink area.
Wet wiping cloths used for occasional spills on equipment food- and nonfood-contact surfaces not clean. Observed a soiled wet cloth on a clean prep table. Manager removed cloth.
