Mobile food dispensing vehicle service opening not kept closed except during food service. Back door of food truck open during service with screening open as well.

No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Operator has chlorine test strips but uses quat tablets. Inspector provided some test strips and color chart for temp event but operator stated she will order.
