Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed milk (55F - Cold Holding/2nd temp: 52F); butter (55F - Cold Holding/2nd temp: 52F); salad mix (55F - Cold Holding/2nd temp: 52F) stored in the walk in cooler. As per owner unit door was open for less than 1 hr. Owner took products inside the walk in freezer.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cooked pasta (108 F - Hot Holding) stored in the hot holding box for less than 1 hour. Operator reheated item Cooked pasta (206F - Reheating).
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Observed SanitizerBucket (Chlorine 100+ppm), operator added more water Sanitizer Bucket (Chlorine 100ppm).

Observed macaroni and cheese (55F - Cold Holding); yellow rice (65F - Cold Holding); pasta (71F - Cold Holding); sweet potatoes (76F - Cold Holding) stored on the steam table for about 3 hours. Items were taken out of the walk in cooler and placed on top of a turned off steam table. Advised and educated operator to place items in the reach in freezer to bring down temperature rapidly.
No proof of required state approved employee training provided for employee hired more than 60 days ago. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Observed Adelin Mervil hired over 2 years ago with no employee training.
